Chimney Rock Chimney Rock New Pages Each year we make our Reserve with the best tasting fruit from our vineyard, and every year, the selection is different. For the first time, the 2000 selection contains Petite Verdot from our hillside vineyard. The cellar treatment we used produced a wine of great depth and concentration. Deep Ruby Red Mulberry aromas infused with hints of oak. Rich, ripe berry flavors in the middle with a smooth silky finish that lingers for a long time.   Vintage: 2000 Type: Reserve Cabernet Sauvignon, Stags Leap District Grape Variety Used: 95% Cabernet Sauvignon and 5% Petit Verdot Alcohol Level: 13.9% Dates Grapes Picked: September 7-October, 19, 2000 Length/Type of Fermentation: 18 months in new French oak barrels, followed by 12 months of bottle aging. San Francisco Chronicle, December 11, 2003 Top Napa Valley Cabernets Lots of toasty oak with black fruit aromas and flavors of ripe blackberry, cherry cola, baking spice, chocolate and coffee; some herb and eucalyptus; fruit is rip and in balance. Connoisseurs' Guide, December 1, 2003 90 Points Counting poise and polish as first among its many assets, this rich, sweetly oaked and beautifully measured young Cabernet sports lots of very friendly fruit from start to finish.  Keen sense of balance that is equaled by few.  Fairly forward, yet quite long on the palate and never overly reliant on ripeness, it calls for mid-term aging and should peak in a half-dozen years.
