The 2009 Cabernet Sauvignon opens with enticing scents of raspberry jam, sweet herbs and spices. There is a centeredness and a poise to the 2009 that give the wine its sense of harmony and total balance. Sweet, floral notes reappear on the engaging finish. As good as this is today, it will only be better in another 2-3 years. This is another fabulous effort from Chimney Rock. The blend is 89% Cabernet Sauvignon, 9% Merlot and 2% Cabernet Franc. Anticipated maturity: 2014-2024. Complex, ripe, firm and vivid dark berry, plum and black cherry fruit is elegant and refined, pure and focused, with just the right backbone. Chimney Rock continues a successful string of vintages with their powerful 2005 vintage. It's a distinguished wine that calls to mind the description of Stags Leap Cabernet as an iron fist in a velvet glove. Rich and full-bodied, it has lush flavors of black currants and smoky new oak. The late harvest of 2005 brought way to beautiful dark fruit aromas of blackberry and huckleberry. The aromatic profile of this wine begins with subtlety but beware - there is a maze of complexity that develops after a short time in the glass. Vanilla, cedar, black currant, toffee and even a hint of lavender and violets emerge in this highly seductive wine.
