Chimney Rock Cabernet Sauvignon Stags Leap District 2005
The 2005 vintage displays the exemplary Cabernet Sauvignon style for which the Stags Leap District is famous. The 2005 vintage was one of the latest harvests we've had. A very cool, wet spring set the stage for late bud break and a cascade of subsequent delays. The great advantage of 2005 was the slow ripening we experienced attaining phenolic maturity without seeing sky-high sugars. The end result of the vintage was nice yields with high-quality, concentration and color. Producers who kept close watch on vineyard parameters will likely see very balanced wines as a result of this unusual vintage. The late harvest of 2005 gifted us with beautiful dark fruit aromas of blackberry, huckleberry. The aroma profile of this wine begins with subtlety but beware -- you may lose yourself in the different tiers of aromas that begin to appear as you spend some time with a glass. Vanilla, cedar, black currant, toffee and even a hint of lavender and violets appear in this seductive wine. This wine is ready to drink now, though it will continue to develop with bottle age. Dark red with purple undertones Beautiful dark fruit aromas of blackberry, huckleberry. Vanilla, cedar, black currant, toffee and even a hint of lavender and violets appear in this seductive wine. The first sip of this wine brought to mind the sense of luxury. Lush, full, round, elegant with a subversively long finish, it has in body as much to offer as the enigmatic aromas.
