Chater Oak Aged Sauvignon Blanc 2004

Winemaker's Notes:

Tasting Notes: A long growing season and fastidious work throughout the year has enabled us to produce an exceptionally aromatic Sauvignon Blanc in 2004. Made from the same juice as our award winning (unoaked) Sauvignon Blanc, this premium wine has the same intense flavours of tropical fruits balanced by a fresh acidity along with an extra spicy vanilla dimension and a weightier body. * Colour: Straw * Smell: Spicy vanilla with undertones of tropical fruit. * Taste: Intense. Vanilla notes from the oak integrate with fresh lime and lychee along with a good balance of acidity. Long finish. * Serving: An ideal aperitif but also great with seafood dishes, chicken, Chinese meals and cheeses. Before serving, allow to warm slightly after refrigeration. Percentage Grape: 100% Sauvignon Blanc Growing Climate: Organic fertiliser Manual de-leafing Considerate spraying regime Manual removal of any botrytis-affected fruit Intense bunch and cluster thinning Date of Harvest: 20th and 23rd September Type of Harvest: Green harvest by hand Vinification Method: Careful hand-picking along with a further check on arrival at the winery assured that only healthy grapes went into our stainless-steel fermentation tanks. Bunches were de-stemmed and lightly crushed. Natural enzymes were added to enable full flavour extraction and the juice was then rested on its' skins, without the addition of sulphur, for twenty four hours before being pressed. Only the free-run juice was retained. After settling, yeast was added to start the fermentation and two new 400 litre French Oak barrels were filled with the juice. Following fermentation, the lees were stirred every two days to add greater complexity to the wine which was bottled in September 2005 after 11 months in oak. Percentage New Barrel: 100% Type of Wood: French oak Date of Bottling: Sept. 2005 Alcohol Percentage: 12 % Aging Time: 11 months
