■ Ripe grapes were lightly pressed and inoculated with Epernay II yeast for accentuated, fruit-forward ﬂ avors. ■ Fermented in 35% new American and French oak barrels. ■ 95% sur lie aged for nine months to integrate the fruit and oak ﬂ avors and provide a rich mouthfeel. ■ Malolactic fermentation also took place to add softness, balance and depth. ■ 5% tank fermented for added fresh fruit character.
