THE 1990'S ARE BACK! It isn't often that one comes across a find like this. 1995 was a truly memorable vintage as this wine shows. The 1995 Le Couvent de Château Peyros was made from grapes grown on the estate's best vineyard. The Tannat supplies the dark fruit flavors and tannic structure while the Cabernet Franc brings spice and herb flavors while adding freshness to the wine. After a long fermentation, the wine was aged in oak barrels (40% new) for just over a year. Only 1,600 cases were made, mostly sold in France and Quebec.
