Terroirs are the expression of a place, a witness to history. Infinitely rich and varied, their complexity is expressed through their biological, geological, topographical and climatic characteristics. Precious and fragile, they are the greatest thing that nature offers us and they cannot be imitated. Their quality is an irreplaceable ingredient in the production of great wines. To produce great wines in the image of a terroir: the idea is simple but the practice requires patience and humility. Pavie Macquin, this eponymous chateau, finds the key to its history in one man, Albert Macquin (1852-1911). It is to him that Saint Emilion owes the idea of grafting vines onto rootstocks, thereby saving the region from ruin by phylloxera. Henri Enjalbert wrote, “During more than thirty years, Albert Macquin was the master of the transformation of the vineyards of Saint Emilion”. The current owners of the chateau are his grandchildren: Benoit and Bruno Corre, Marie-Jacques Charpentier and their children. They have shown, like their ancestor, a great attachment to this admirable terroir. Read less
Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Baked plum, baking spice, black currant, vetiver, a touch funky – a bit extracted up front then quite seamless, lovely richness and purity to the fruit, a touch of spicy herb up front, real power on the finish which ends a bit abruptly (89-90)

80% Merlot, 20% Cabernet Franc. Only 5.5 hectares. Sweet cherry with blackberry and a faint hint of black olive on the nose. Has a nice luscious mouth-feel that builds in power towards the back. This is a very pleasing wine. Alex Lallos. A Bordeaux Blend wine from Bordeaux in France. 2007 St Georges Cote Pavie 750ml

A well-structured rose, with a fruity aroma and good raspberry and cherry flavors. Juicy, with good acidity, and a pleasant finish.

Along with Lafite Rothschild, Ausone, and l'Eglise Clinet, Pavie is one of the wines of the vintage. An inky/purple color is accompanied by notes of creme de cassis, kirsch, graphite, and toast. A massive wine for the vintage, the 2007 Pavie is very full-bodied with extraordinary intensity, power, and richness. Its structure and tannin suggest 2-4 years of cellaring is required, and it should evolve for 25 years thereafter ,an unusually long aging curve for most 2007s. Yields were 25 hectoliters per hectare, and the wine is a classic blend of 70% Merlot, 20% Cabernet Franc, and 10% Cabernet Sauvignon. The natural alcohol level came in at 14%.
