Food Pairings for Chateau Olivier Jéroboam
I really enjoy the few whites I have had from Graves. I happened on this 1992 Olivier in the cellar at my favorite liquor store for only $10. As it was old, it was a gamble, but it paid off. This was a nice, still crisp white with balanced minerality, acidity and hints of sour apple. We had to drink it all immediately as once opened, it went downhill quickly. Not sure a bottle this old would still be good now and moving forward.

Château Olivier, a listed national landmark dating from the 12th century, is situated in a site of outstanding natural beauty just 11km from Bordeaux. The estate covers 220 hectares of which 52 are under vine in a single block on a south-facing gravely rise. Great care is lavished in the vineyard : bunches of unripe grapes are removed when necessary for maximum concentration, leaves are thinned out, grapes are sorted before crushing, and the wine is blended so that only the finest vats are sold under the prestigious great growth label. Château Olivier is a well-balanced wine of great finesse and elegance. The white wine is fermented and aged in barrel on its lees, which are regularly stirred. The red wine is fermented in temperature-controlled vats prior to ageing in oak barrels.
A very ripe white, with mango, honey and vanilla character. Full-bodied, with lots of flavor and a long finish. Will improve with age. Drink now through 2004.
(Barrel tasting) Very fine. Gorgeous floral and berry aromas. Full-bodied, with a solid core of fruit and a long, long, silky finish. Almost 92-94.
Another excellent vintage for Bordeaux's dry whites, which tend to be vastly underrated and exceptionally long-lived (30-40 years in some cases). The 2005s possess crisp acidity as well as serious weight, richness, and texture. Space constraints did not allow full tasting notes, but this is one of the top 2005 dry white Bordeaux wines.
