Château les Vergnes Red Bordeaux Blend Bordeaux Contrôlée 2008
From pruning through to picking, the key priority is to control yields (50 hl/ha). Green harvesting and leaf-stripping are carried out to help the grapes ripen. Thanks to polyphenol analysis, the grapes are brought to optimum ripeness. The wine is made using the traditional Bordeaux method: selected enzymes and yeast added during the transfer into vats, with temperature control (30° C max). The maceration time depends on the quality of the tannins that are extracted (10 to 15 days). Pneumatic pressing Matured in vats before bottling. Stored in a temperature-controlled cellar for 6 months.
Food Pairings for Château les Vergnes Red Bordeaux Blend Bordeaux Contrôlée
Deep crimson with ruby tints. In the nose it is lively and generous with aromas of red fruit and liquorice. Structured and rounded on the palate with a long finish revealing lovely mature tannins – mild and silky. Just the wine to be laid down in a cellar for two or three years to reach its best.
