Nada que decir sobre este vino excepto una palabra: Perfecto. Evolucionado a la perfección después de 10 años, con esas notas acompotadas, minerales clásicas de los vinos de pomerol. Este vino en boca resulta tan excepcional, sus sabores se complementan, fruta negra en almibar, canela, chocolate, tabaco, cuero! Un vino espectacular! A la espera de abrir una botella de 2006 que tengo en mi cava personal!

Tasted February 2008: Now very expensive, at the time a bargain. Although fully mature and not for keeping any longer, the wine has still its qualities. Now fully mature ruby colour, chocolatey and slightly earthy bouquet, in the mouth sweet, ripe, soft, but fading away quickly and somewhat onedimensional. Drink up!

Expected blend of 80% merlot and 20% cabernet franc. This 7-hectare estate near L'Evangile is owned by Dany and Michel Rolland. Soils are clay and gravel. Nearly opaque purple color. A beautifully perfumed nose is dominated by red raspberry, cherry and spice. This profile carries over to the medium-bodied palate that shows terrific purity of fruit. Very grapey on the nose, with coffee, blackberry and toasty oak. Full-bodied, soft and velvety, with plenty of fruit and milk chocolate aftertaste. A juicy young red. Best after 2013.

A superb effort from proprietors Dany and Michel Rolland, the 2005 Bon Pasteur is the antithesis of the kind of wine Rollandandrsquo;s critics claim he makes (which they ignorantly suggest are over-oaked, over-extracted, and over-the-top). Nothing could be further from the truth. Rolland, a brilliant oenologist, has done more than any other person alive today for the quality of Bordeaux. His 2005 Bon Pasteur is an elegant, subtle, deep ruby/purple-colored wine offering hints of graphite, sweet mocha, black cherries, and berries that build incrementally in the mouth, ending in a cascade of full-bodied, concentrated fruit with good acidity, beautiful tannin, and stunning precision as well as length. The tannin structure suggests 3andndash;5 years of cellaring is warranted, but based on past examples (even the opulent 1982, which is still going strong), the 2005 should age for 25andndash;30 years.
