Winemaker's Notes:

An elegant traditional method sparkler made using 60% Chenin Blanc, 20% Chardonnay, 20 Cabernet Franc. Lively, fresh and elegant with complex fruit notes - quince, peach and grapefruit. Length/Type of Fermentation: Separate vinification in 100 hl temperature controlled, stainless steel tanks. Gentle pneumatic pressing (160kg of grapes for 100 liters of must). Length/Type of Aging: Minimum of 24 months maturation on fine lees.
