Steely, flinty pineapple nose. Good acidity, not sour. Clean, true to varietal. Green taste. $16

Crisp and mineraly, this is exactly the kind of white wine I want to drink all summer. I like it chilled with a couple pieces of mild cheese or alongside shrimp or even with a hot lobster roll. It has a nice lemony taste going on but it isn't sharply acidic like a New Zealand sauv blanc. I really love it when I can get it.

This is a crisp and clean white Bordeaux that has a lovely mouth-filling texture and pithy fruit character. As much as we adore the lean and mineraled Loire Valley take on Sauvignon Blanc, we also enjoy the rounder style unique to Bordeaux.

The Ste.-Croix-de-Mont appellation is considered the finest of the trio of sweet wines (with Loupiac and Cadillac) across the river from Sauternes. This wine is botrytis-affected in a somewhat lighter style than traditional Sauternes.

Winemaker's Notes:

Seeking extreme ripeness, the harvest is done entirely by hand and proceeds in successive passes over a series of weeks. The fermentation occurs over a three to six week period at controlled temperatures [between 18 and 22 degrees centigrade]. A dry, crisp, enchantingly aromatic Bordeaux Blanc.
