The wine is a classic Bordeaux, with a nose of rich black fruit, anise, leather and tart cherry. The taste is very Bordeaux, with very mellow fruit up front that quickly transitions to dusty limestone and complex minerality mid palate. The finish is long and extremely dry, classic Bordeaux. Chateau Hyot showcases the masterful skill of winemaking consultant Michel Rolland. The wine is a Merlot-based blend from mature, 40 year-old vines. 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon. It was aged in 60% new French barrels for 12 months. Grapes are hand-picked, plot by plot, then meticulously sorted and de-stemmed before placement in stainless steel vats with temperature control. Wine Spectator scored it 90 points saying "Very ripe, offering saturated cassis, blackberry and boysenberry pâte de fruit flavors that are racy and distinctive, thanks to fresh acidity and sleek tannins. The long finish has nice density." A superb value.
