Composition: Riesling 100 % Vinification: This sparkling wine, made in the traditional Cremant style, is made entirely from Riesling grapes grown in Chateau Frank's vineyards. The Riesling is pressed whole-cluster in membrane presses thereby extracting a minimum of phenolic. Following the Cremant method, the Celebre is aged “sur lies" after the estate tirage. Finally, the Celebre is riddled by hand or gyropalette prior to disgorging. Description: This delicious, fruity Cremant style sparkling wine is a very inviting, easy-to- drink sparkling wine. Apple, honey and spicy aromas on a solid acidic backbone gives this wine a great balance and fruit forwardness. Analysis: Alcohol: 11.6% Acidity: 0.76 pH: 2.99 Sugar: 2.1%

Dr. Konstantin Frank ignited the “Vinifera Revolution” a movement that forever changed the course of wine growing in the Finger Lakes and the United States. Dr. Frank’s vision, knowledge and determination are credited with elevating the New York wine industry from a state of happy mediocrity to a level that today commands world attention. A European immigrant, Dr. Frank and his family arrived in the United States in 1951. After a brief stay in New York City, Dr. Frank, a professor of plant sciences who held a Ph.D. in viticulture, moved upstate to take a position at Cornell University’s Geneva Experiment Station. Dr. Frank believed from his years in the Ukraine that the lack of proper rootstock, not the cold climate, was the reason for the failure of Vitis Vinifera vines in the Finger Lakes region. He continued to promote his beliefs and to seek a sympathetic ear, which he found in Charles Fournier, a French champagne maker and president of nearby Gold Seal Vineyards. Communicating in French, Dr. Frank revealed his research for growing the delicate European vinifera grape varieties in cold climates. For the first time the Northeastern United States could produce European varieties of wines. In 1962, merely a decade after arriving in America, Dr. Frank founded Vinifera Wine Cellars. The winery quickly earned a reputation for spectacular Rieslings and its original planting of vines formed the backbone of New York’s world-class wines and champagnes. Never content to rest on his laurels, Dr. Frank’s son, Willy Frank continued the tradition of excellence and determination. Willy amazed the industry in the late 1980’s by releasing an exquisite sparkling wine made at his very own Chateau Frank. Chateau Frank adheres to the “methode champenoise” using the three classic French Champagne grape varieties successfully creating another first for the Finger Lakes Region of New York – world class sparkling wines. With the help of his cousin Eric Volz as vineyard manager, Willy’s son, Frederick Frank, took over leadership of the winery in 1993 and expanded production with the introduction of a value brand, Salmon Run, which is in honor of the majestic landlocked Salmon and beautiful Keuka Lake. Fred’s business degree from Cornell University and his study of viticulture and enology in Germany helped prepare him to take over the family business. Under Fred’s leadership the winery’s production and amount of medals earned has increased greatly and he looks forward to one day turning over the reins to his son, Kyle Konstantin, who hopes to continue as the fourth generation of Franks at the winery. Dr. Frank’s Wine Cellars is proud of its international winemaking team with each member bringing in their particular expertise. The talented group includes winemakers from California, Australia, France and Germany. Brisk, lemony and thoroughly refreshing, this sparkler’s ripe pear flavors and mild pear-skin finish would merit a pairing with miso-glazed chicken. It’s also an irresistible aperitif.

When asked what my favorite wine is, I am often torn between Riesling and sparkling wine. This wine is truly the best of both worlds: a sparkling wine made in the Champagne style (Mandeacute;thode Champenoise) using 100% Riesling grapes. Since I am also an avid locavore, the fact that this wine comes from the Finger Lakes makes it even more perfect! The Chateau Frank Candeacute;landegrave;bre exhibits ripe, honeyed peach and apple aromas that follow through to the palate with mouthwatering acidity. There is a touch of sweetness from the ripe fruit notes and 3% residual sugar, and the balancing acidity leads to a fresh and clean finish. Celebrating the outstanding sparkling wines coming from Chateau Frank in the Keuka Lake area of the Finger Lakes is reason enough to pop the cork on this wine. It also pairs well with a variety of foods, such as homemade lemon ricotta ravioli with pine nuts and parmesan cheese or with Indian take-out.

The Candeacute;landegrave;bre is a Cremant-style methode champenoise wine made from Finger Lakes Riesling and Chardonnay grapes grown on vineyards located on Keuka and Seneca lakes. Offers very forward fruity character, while the acidic backbone and overall elegance assure a well balanced wine.
