Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

User Reviews for Chateau Frank Blanc de Blancs

Winemaker's Notes:

Composition: Chardonnay 86 % Pinot Blanc 14 % Vinification: All grapes originate from Chateau Frank’s vineyards and are pressed whole cluster in membrane press while making a severe selection of the press fraction in the traditional Champagne style. The base wines were fermented cold at 16 C/61 F to preserve fruity aromas and freshness. After estate tirage the bottles were aged “sur lies” in underground cellar for more than three years before being riddled by hand or gyropalette. Description: Presenting typical complexity and delicate flavors, this wine exemplifies the traditional Blanc de Blancs style. A crisp acidity accompanied by citrus, floral and hazelnut aromas makes this medium-bodied Champagne very pleasant. Extended lees aging gives it noticeable yeast autolysis character with notes of toast and bee wax. Analysis: Alcohol: 12.4 % Acidity: 0.81 pH: 3.17 Sugar: 10 g/l (or 1 %)
