Winemaker's Notes:

Composition: Chardonnay 86 % Pinot Blanc 14 % Vinification: All grapes originate from Chateau Frank’s vineyards and are pressed whole cluster in membrane press while making a severe selection of the press fraction in the traditional Champagne style. The base wines were fermented cold at 16 C/61 F to preserve fruity aromas and freshness. After estate tirage the bottles were aged “sur lies” in underground cellar for more than five years before being riddled by hand or gyropalette. Description: Presenting typical complexity and delicate flavors, this wine exemplifies the traditional Blanc de Blancs style. A crisp acidity accompanied by complex aromas of yeast, citrus, lemon, ginger, floral and hazelnut makes this medium-bodied Champagne very pleasant. Extended lees aging gives it noticeable yeast autolysis character with earthy and toasty notes with a tropical finish. Analysis: Alcohol: 11.8% Acidity: 10.5g/100ml pH: 3.18 Sugar: 1.1%
