Castillon is one of the best parts of the of the Côtes de Bordeaux; the wines are rustic and complex, an excellent complement to slow-cooked winter meals with lots of terrific herbs and spices. The Château du Baradis shows off to perfection the black fruit, spice and earth for which the region is famous. A robust, hearty alternative to your favorite Rhône; try this with braised lamb or pot roast.

The color of this wine is a deep ruby; elegant nose of dark berry fruit opening into ginger and spice. On the palate are black cherry and black currant flavors, with full, rich flavors balanced by subtle tannins. The wine is followed with vanilla and cedar on the long and satisfying finish. Red berries mingle with notes of cedar and spice. Enjoy this wine with braised short ribs and cinnamon spiced butternut squash.
