Percentage Grape: 70% Merlot and 30% Cabernet Franc<br/><br/>Soil: Soils here are a mix of clay and limestone in which one finds fossilized seashells (calcaires à astéries), atop the limestone mother lode typical of the best parts of Saint Emilion and Castillon.<br/><br/>Date of Harvest: the harvest began on Oct. 1st<br/><br/>Vinification Method: The fruit is fermented in temperature-controlled, stainless steel tanks and underwent a 25-day maceration with occasional microbullage under the cap used to soften the tannins.<br/><br/>Age of Barrel: 30% one-wine old<br/><br/>Type of Wood: French oak<br/><br/>Alcohol Percentage: 13.6 %<br/><br/>Aging Time: 12 months

This blend of 70% Merlot and 30% Cabernet Franc sports a solid, deep purple-ruby hue; aromas & tastes of ripe black fruits (blackberry, black currant, boysenberry), with hints of vanilla, cocoa & brown spices from the oak treatment. Full-bodied, long on flavor, it is true to its grapes & vintage: smooooooth, juicy and round. Enjoy with red meat preparations, both bloomy-rind & firm, aged cheeses, by itself by the fire.
