Food Pairings for Château de Fonbel Saint-Émilion Grand Cru
Had this on 27 March, 2011 with well marinated entrecote. Have had it in my cellar since 2005, so 6 years of cellaring. Elegant and clear, some sediment left in bottle, but not in glass. Highly aromatic, plenty of fruit, plum, cedar, mocha and dark blackcurrant. Also some spices and minerals, and still somewhat tight tannins. A typical St. Emilion at its best - tightish, luxurious and a lot of body. It is getting closer to its prime, but could improve for another 2 to 3 years in the cellar. It is nice to find a great Bordeaux at a reasonable price (this was EUR 20,- back then) from time to time. It does not happen that often these days.
