Château de Clotte Red Bordeaux Blend Côtes de Castillon 2005

Bottle opened and decanted for 2.5 hours before tasting. Color is murky red with a hint of brown. Nose is not so enormous, but delicate and refined. Contains notes of cherry. There are other delicate aromas that appear after vigorous swirling that I am having a hard time pinning down that disappear quickly. Tasting is a pleasant experience. The first sip explodes with a lot of grip and structure, with a slight note of cherry, but not in-your-face like American wines. Finish lingers for maybe 10 seconds, with a tiny bit of bitterness and a flavor of sticks or vines. Taking a quick sip, the flavor transitions from jam to tart to bitter. Also tasted the wine with brie and cherry preserves. The wine with both the brie and cheese was not a stellar combo. However, upon tasting the wine with just the cherries, we find a winner!
