The harvest is carried out when the grapes are mature and more than half of the vineyard is hand-picked. The wine making is exclusively on the lees mainly in stainless vats. The maturing on the lees and the technique of “batonnage” brings more complex fruit to the wine. It is bottled at the Château in the Spring.

The Muscadet region extends mainly South East of Nantes near the mouth of the river Loire. The most significant and varied appellation by far, representing four in every five bottles is Muscadet de Sèvre et Maine, named after two small rivers which flow through, this the most monocultural part of the Pays Nantais, South and East of the City of Nantes. Indeed more Muscadet de Sèvre et Maine is produced every year than any other Loire appellation. Chéreau-Carré is one of the leading Muscadet producers with substantial family owned vineyards in some of the best locations in the region.
