Food Pairings for Chateau d'Aiguilhe
This wine shows why the very general location of an important battle to the east of St.-Emilion is definitely on the up-and-up; deep, dark and full of the sweet scent of cherries, this wine enters the mouth with good, declining tannin, sweet red fruit and a hint of medicinal herb (eucalyptus, maybe). Long, powerful finish. Can be cellared for a number of years yet. 90 points.
Herbs and dark fruit, somewhat suppressed nose. A little bit green at this stage with a light to medium bodied mouth-feel with spice and floral notes. This is heavy cabernet concentration for St. Emilion, so patience will no doubt be rewarded. Still, this is showing the stuffing to be a 90-92 point wine with a drinking window of 2015-2030+.

Château Canon-la-Gaffelière (formerly La Gaffelière- Boitard), has been recognised for centuries as one of the finest growths in Saint-Emilion. Count von Neipperg, scion of a family with eight centuries of winegrowing tradition, bought this estate in 1971. His son Stephan is currently in charge of managing the estate. A renaissance has since occurred at Canon-la-Gaffelière after several years of major efforts involving large-scale investments. All of this has been done with an indepth understanding of the special nature of the soil.The wine is made in an ultra-modern vat room with wooden fermenting vats. Château Canon-la-Gaffelière is very deep in colour with excellent concentration, intense fruity flavours and ripe tannin. It is both full-bodied and elegant with fine ageing potential. Each new vintage reveals a different facet of this wine's marvellously complex personality

A soft, surprisingly elegant, evolved effort, this 2008 does not reveal a lot of depth, but it offers sweet black cherry fruit, a charming personality, and background oak as well as earth. This is one of the strongest efforts from Canon-La-Gaffeliere since their spectacular 1990. Tiny yields of 30 hectoliters per hectare and a final blend of 55% Merlot, 35% Cabernet Franc, and 10% Cabernet Sauvignon have resulted in a wine of exceptional complexity. Aromas of roasted herbs, spice box, sweet and sour cherries, licorice, incense, and black fruits are followed by a wine with tremendous opulence, full body, and moderately high but sweet tannin. Excellent acidity gives precision to this big, but impeccably well-balanced, pure.
