Winemaker's Notes:

Tasting Notes: Clos Chaumont is produced on 8ha, above the Garonne valley, on sunny limestone cliffs. Clos Chaumont is a garden where we care each vine plant, we know them ( ex : the vine spot that we call Coureau is weak but so concentrated, the caberner-franc of Le Moulin comes from an ancient grape-variety that we grafted...) low yield, green harvest, Percentage Grape: Merlot 66% Cabernet- Sauvignon 22% Cabernet-franc 12% Soil: half at the top of a limestone cliff over-looking the Garonne River. And half on the beginning of the plateau de l Entre Deux Mers, on gravel sub soil. Growing Climate: southern sunny cliffsare planted with Merlot. two or three picking are necessary when harvested, to get the perfect ripeness. Green harvest in July, and leaves are thined. Type of Harvest: harvested by hand, with little boxes. selection table before it is striped. Vinification Length: 2 weeks Vinification Method: maceration 3 weeks in concrete tank. cold at the beginning, then 29 °maceration during 2 weeks. Vinification Temperature: 29° Percentage New Barrel: a third Type of Wood: Caucase Oak Malolactic: in oak barrels , on lees. Fining Collage: fined with Egg white Date of Bottling: 25/05/2004 Alcohol Percentage: 13 % PH: 3.52 Aging Potential: 12 years Aging Time: 16 month Sugar Rate: 0-5 g/l Total Acidity: 3.78g/l Free SO2: 33mg/l Cork Material: 1rst natural cork Cork Size: 49 X 24
