Château Canon Red Bordeaux Blend St. Émilion Grand Cru 2011
Dark, earthy nose, slightly fudgy, tomato leaf, carnations, integrated and balanced wood spice – nice fruit up front, a bit lean on the mp, slightly elevated acids, nice fresh fruit, fairly structured for it’s size, a bit tough, balanced though, moderate finish shows some tough tannins, will need some time (87-88)Add winemaker's notes

A bit Funky on the nose with a dusty character and dried wild cherry fruit accented with green tobacco notes. On entry this is rather soft, modestly endowed with a nice mineral soil tone up front then building gently layered complexity with notes of cherry, tobacco, and oak spice building across the palate. The backend shows better focus as the tannin kicks in, with the finish displaying excellent length and ripe fruit with only a touch of vegetal herbaciousness. This needs time to knit together but should improve. 89pts
Well made, full of rich fruit, but a bit oo extracted for my palette. I can't pick a fault with the wine, but somehow it lacks some fun. It ticks the right boxes in quality stakes, but somehow it lacks a little imagination and cunning to make it a great wine. Good, very good, but not great.
Three and a half glasses
Vollmundiger, typischer Bordeaux! Ein wahnsinn Wein! Quasi: 75cl Wahn. Vollmundig, beerig, kräftig. Sehr reife Tannine. Ein absolutes Highlight!

Lovely dark red and purple color of good intensity. Fruity nose of average intensity and ripe type. Smooth and silky. The wine develops aromatic and fat. The estate confirms its style with a very silky touch. On the finish this wine shows good length with a fine grain. Jean-Marc Quarin - www.quarin.com
Chateau Canon's wines are aged in oak barrels for 18 to 20 months. 50 to 70% of the barrels used each year are new, depending on the quality and needs of the vintage. The wines are racked into clean barrels every 3 months as part of a process that removes sediments from the wine. Six months before bottling, the wines are 'fined' using fresh egg whites in the barrels. The decision on the final blend takes place in March. Finally the wines are bottled without filtering.
In der Nase zeigen sich Aromen von Pflaumen, Heidelbeeren, Zedernholz. Im Gaumen ist der Wein stoffig und von guter Balance.
