Gérard Boudot, who married the granddaughter of the late Etienne Sauzet, runs the domaine and has modernized and improved the vinification, seeking "maximum finesse and an individual expression of the climate." Although the winemaking technique is more modern in the hands of M. Boudot, he is maintaining M. Sauzet's tradition of aging the wines on their lees for 10-12 months in order to extract all the flavor and richness out of them. Boudot vinifies only with natural yeasts and Sauzet wines are superbly finished, fruity, full-bodied and authoritative examples of white Burgundies.Tthey are among the most sought-after white wines of Burgundy. This Chassagne-Montrachet is a prime example. The Wine Advocate said "The 2009 Chassagne-Montrachet emerges from 40 year-old vines in Les Enseigneres. It is a gorgeous wine laced with flint, slate, smoke and sweet yellow stone fruits. I especially like the minerality and fine grain of the finish. The Chassagne should drink well for at least a few years. Anticipated maturity: 2012+."
