Chappellet Vineyard Cabernet Sauvignon Napa Valley 2000
The 2000 Signature Cabernet opens with intense, dark fruit aromas of blackberry, currant, and dark cherry. The concentrated fruit is punctuated with spicy notes of anise and black pepper adding complexity and character to the nose. Layers of dark chocolate and roasted coffee impart additional depth and richness. The aromas carry through satisfyingly into the rich, mouthfilling palate. Baked cherry, toasty oak and hints of smoke and spice round out the flavors and lead to a long, flavorful finish. Enjoy now through 2012.
Beautiful dark red color with no indication of bricking. Earthy nose. Very smooth on entry. It takes a second as the wine moves back to detect currant/black raspberry flavor, but it is very subdued. While tannin is detectable, the years on this bottle have subdued or resolved most of them. A similar comment can be made about the acid level. Light acid is detectable. Lengthy finish with hints of leather or tobacco.
[$120] black and red fruit, tar, tobacco. Lacked the big fruit and cassis I look for in a Cali cab, had a strong earthy quality. Actually it felt a little thin after a few hours. Drinking now, but the group clearly preferred the 2002 Signature. And I prefer the '00 Signature to this esp at 1/3 the price. Didn't purchase.
My last bottle and appropriate. Drink 'em now.
[Salt, lamb] Dark purple; aromas of currant, spice smoke. Didnt seem as concentrated as the last bottle, but still great. Cassis, cherry cola, spice, chocolate. If there is a better $30 Cab, I need to know about it.
[Penne with pesto] Dark purple; on the nose, lavender, currant, and spice; full-bodied, creamy, meaty, super concentrated; on the palate, blackberry, chocolate cedar, spice and smoke. When I first opened seemed a little lighter with detectable Petite Verdot, however over about 4 hours became heavier with super-concentrated fruit and more pronounced chocolate. A great drink now, but if you have only 1, hold it; it benefit from a few years in the bottle. I regret that I bought only 1. I find myself so frequently dissappointed by the many overpriced and overhyped Cabs, however at <$40 this is a great selection.
