Chappellet 'Signature' Cabernet Sauvignon 2010
RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Chappellet Cabernet is a benchmark for the long-lived hillside wines of the Napa Valley; full of structure and aging potential, yet seductively forward in its concentrated varietal character.
Opening with expressive notes of blackberry, cherry and cassis, this wine is full-bodied and rich. Hints of chocolate and espresso layer with spicy oak for added complexity. Smooth tannins infused with ripe sweet fruit create a lush, supple texture. Rich waves of berry, spice and herbs create a lasting impression of finesse and structure in this Cabernet.
Introduced by sweet blackberry flavors, this takes time to develop past an initial simplicity of fruit and oak. The tannins slowly develop textural detail, while the fruit gains complexity with a gamier edge. A fine Napa cabernet to order decanted at a steakhouse.
The 2010 Cabernet Sauvignon Signature is a dark, mysterious beauty endowed with considerable depth and richness. Mocha, chocolate, spices and plums fuse together gracefully as this soft, supple wine takes shape in the glass. I very much like the immediacy of the 2010. Only a little bit of persistence is missing on the finish, but not enough to materially detract from what is a gorgeous bottle of wine. For Napa Valley standards, this is about as good as it gets for the money. The blend is 76% Cabernet Sauvignon, 13% Merlot, 7% Malbec and 4% Petit Verdot. Anticipated maturity: 2015–2025.
Sturdy and rich, a classically proportioned Bordeaux-like expression of mountain-grown fruit. Dense and chewy, showing dark berry, currant, cedar and crushed rock notes, with a dash of black licorice woven in. Drink now through 2025.
Good medium ruby-red. Inviting aromas of cassis, dark chocolate, mocha, licorice, tobacco and loam. Supple on entry, then ripe, suave and concentrated, with harmonious acidity framing the youthful currant, mocha and menthol flavors. A bit less giving today than the nose suggests but nicely sweet and sharply delineated. The firmly tannic, lively finish is a bit youthfully tough and in need of patience, but this cabernet offers outstanding potential.
For more than four decades, the Chappellet family has been crafting world-class wines from fruit cultivated on the steep, rocky slopes of Napa Valley's renowned Pritchard Hill. As one of the first wineries to pioneer high-elevation hillside planting, and one of the few remaining great family-owned Napa Valley wineries, Chappellet Vineyard and Winery has influenced generations of vintners. Throughout its history, Chappellet has also established an enduring legacy as one of California's most acclaimed producers of Cabernet Sauvignon. This, their Signature Cab has gotten rave reviews from the critics including Antonio Galloni who scored it 92 saying "The 2010 Cabernet Sauvignon Signature is a dark, mysterious beauty endowed with considerable depth and richness.
