The nose delivers an early blast of crushed fresh herbs, black currant fruit and very well-judged oak. Well-balanced and nearly seamless in the mouth with a slightly polished feel. The tannins are here but the almost gauzy blanket of black berry and plum fruit manages to conceal them right through until the finish. Even on the finish there is a sweetness to these tannins, an attractive gentleness that keeps them from detracting from the light, gently herbal and earthy core of lingering black fruit. Very aromatic with heather top notes over a base of lemon oil, butter, smoky grilled peaches, mango and hickory smoked aromas. Smooth, soft and opulent in the mouth, the low acidity here lends this a sweetness in the mouth that accentuates the ripe flavors of apple, pear and pineapple. Chappellet Cabernet is a benchmark for the long-lived hillside wines of the Napa Valley; full of structure and aging potential, yet seductively forward in its concentrated varietal character.
Opening with expressive notes of blackberry, cherry and cassis, this wine is full-bodied and rich. Hints of chocolate and espresso layer with spicy oak for added complexity. For more than four decades, the Chappellet family has been crafting world-class wines from fruit cultivated on the steep, rocky slopes of Napa Valley's renowned Pritchard Hill. As one of the first wineries to pioneer high-elevation hillside planting, and one of the few remaining great family-owned Napa Valley wineries, Chappellet Vineyard and Winery has influenced generations of vintners. Throughout its history, Chappellet has also established an enduring legacy as one of California's most acclaimed producers of Cabernet Sauvignon. This, their Signature Cab has gotten rave reviews from the critics including Antonio Galloni who scored it 92 saying "The 2010 Cabernet Sauvignon Signature is a dark, mysterious beauty endowed with considerable depth and richness. Mocha, chocolate, spices and plums fuse together gracefully as this soft, supple wine takes shape in the glass. I very much like the immediacy of the 2010. Only a little bit of persistence is missing on the finish, but not enough to materially detract from what is a gorgeous bottle of wine. For Napa Valley standards, this is about as good as it gets for the money. The blend is 76% Cabernet Sauvignon, 13% Merlot, 7% Malbec and 4% Petit Verdot. Anticipated maturity: 2015-2025."

Chappellet Mountain Cuvee is called Cervantes in the 2010 vintage, however it stays true to the previous blends - a core of Cabernet with a significant amount of Merlot with a bit of Petit Verdot and Malbec rounding out the blend.
