Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Founded in 1750, Chanson is one of the five grand "shippers" of Burgundy's Côte d'Or, an estate steeped in centuries-old tradition and rich in viticultural history. As a négociant (winemaker and merchant) and a domaine (vineyard estate), Chanson has represented the best of Burgundy for more than 250 years, growing its own grapes, partnering with other growers, bottling, selling, and shipping its own wines. Chanson's holdings comprise some of Burgundy's most coveted vineyards (over 90 acres, including 10 Premier Crus, one Grand Cru (Corton), and a rare monopole Premier Cru vineyard. Jean-Pierre Confuron of the Domaine Confuron-Cotetidot is now the winemaker, bringing hands-on, boutique approach to every vat. The grapes for this Nuits St. Georges are sourced from two vineyards right next to the celebrated Premier Cru Vaucrain. It shows ripe berry and forest tones with hints of smoke and truffle. Winemaker's Notes:

With a history dating back to 1750, this fine Domaine was founded during the reign of Louis XV. When the Chanson family took full control in the 1800s, they already had substantial holdings in Beaune, Savigny-lès-Beaune and Pernand-Vergelesses, which they added to the business. Ownership of some of the top Premiers and Grands Crus vineyards in Burgundy remains a priority for the house. Their 45 hectare Domaine is managed by Gilles de Courcel and his experienced, dedicated team. Winemaker Jean-Pierre Confuron of the celebrated Vosne-Romanée dynasty continues to improve quality selection of fruit and the refurbished Bastion de l’Oratoire in Beaune is now home to a state of the art fermentation room as well as being the perfect environment for gentle maturation of their crus. Domaine Chanson Pouilly-Fuissé shows pale yellow, offering beautiful white flower fragrances mixed with pale fleshed fruit and honey with a delicate vanilla note. The body is dense and well-structured with delicate minerality and well-balanced acidity while the finish is deliciously long and refreshing. It is a brilliantly versatile white wine, easy to pair with fish, cooked pork meat, charcuterie ("jambon persillé"), white meat and some goat cheeses, so enjoy!
