Winemaker's Notes:

With a history dating back to 1750, this fine Domaine was founded during the reign of Louis XV. When the Chanson family took full control in the 1800s, they already had substantial holdings in Beaune, Savigny-lès-Beaune and Pernand-Vergelesses, which they added to the business. Ownership of some of the top Premiers and Grands Crus vineyards in Burgundy remains a priority for the house. Their 45 hectare Domaine is managed by Gilles de Courcel and his experienced, dedicated team. Winemaker Jean-Pierre Confuron of the celebrated Vosne-Romanée dynasty continues to improve quality selection of fruit and the refurbished Bastion de l’Oratoire in Beaune is now home to a state of the art fermentation room as well as being the perfect environment for gentle maturation of their crus. Savigny-Dimonode shows bright ruby with wonderfully intense aromas of violet, cherry and rapsberry mixed with vanilla. It offers a wonderfully refreshing and elegant structure with well-integrated tannins and delicate oak note leading on to a long and generous finish. This wine is beautiful to drink by itself or alternately pair with red and white roasted "en sauce" meats, game and a variety of cheeses.
