Lemon and grass clippings up front, nice creamy finish w hints of custard. Great wine.

Complex nose with apples, pears, peaches, baking spices and faint floral notes. This is a fairly full-bodied white that could use a touch more acid for my liking (keep in mind that flabby chards are my least favorite wines). It's nicely fruity with crisp pear and stone fruit giving way to tropical flavors as the wine warms a little in the glass.
Our new wine, Mosaico, is an exotic field blend made from a very special mix of grape varieties. The fruit comes from a complanted vineyard block on the western side of our Sylvanus vineyard here in Bridgehampton. The 2006 Mosaico is comprised of 34% Pinot Grigio, 33% Chardonnay, 14% Sauvignon Blanc, 7% Tocai Friulano, 6% Gewurztraminer and 6% Muscat Ottonel. This is a dry white wine where all the grape varieties were harvested, pressed and fermented together in a stainless steel tank (81%) and three new Slovenian and French oak barrels (19%). All the fruit was hand-picked and whole cluster-pressed together, except the Muscat which was fermented on its skins in a bin and blended back in. This white wine is texturally, aromatically and deliciously unique. The aroma is heady with scents of cantaloupe, honeydew melon, pineapple, rose petal, citrus, apples and a central streak of minerality. There are hints of brown spice on the palate and a juicy persistent finish. It has an underlying exotic nature that is perfumed, honeyed, apricoty and nutty that comes from the skin-fermented Muscat. It is subtle (it's only six percent after all) but it lends the wine a kind of intriguing ephemeral nature that keeps you sticking your nose in the glass and the wine in your mouth. Mosaico first reminds you of spring and then you realize it has a more symphonic nature that can complement a variety of foods through all four seasons. Fluke tartar, smoked trout, a citrus roast chicken, or a lobster and bacon risotto would all be wonderful with our Mosaico. This is a wine that can pair well with fresh, crisp, acidic foods as well as match with richer more autumnal flavors. This wine is a mosaic of grapes and a mosaic of vinification techniques, it is a mosaic of ideas and people and it is inspired by the mosaic that is America as well as the mosaic of Friuli-Venezia Giulia.
