Light gold, with a vigorous mousse. Smoky red berries, cherry pit and cocoa powder on the pungent nose. Big, richly textured Champagne, with strong apple, musky yellow plum and ripe pear flavors. A densely flavored bottling that finishes with strong mineral and citrus zest notes. Serve it now as an aperitif or hold it for a few years.

A blend of 80% Pinot Noir and 20% Chardonnay, Lallement’s non-vintage Brut (May 27 2005) reveals top-flight aromatic richness in its floral scents. Though predominantly Pinot Noir, this wine is eerily Chablis-like, with concentrated salty mineral flavors. Light to medium-bodied, spicy, and dry, it reveals outstanding depth.
