Champagne Champagne Bollinger Vieilles Vignes Françaises 1997

Winemaker's Notes:

Berry Bros & Rudd review: Bollinger were the first successfully to market the Late Disgorged concept;
indeed they imposed a trademark on the RD (Récemment Degorgée)
nomenclature, leaving imitators linguistically taxed in their wake. Rather more
controversial is their philosophy of multiple releases of the same wine:
irrelevant in this instance, the 21st vintage of this great wine which is on
its first outing, an extremely impressive wine it is too, combining the forward
ripe fruit flavours that one associates with this particular vintage, and the
biscuity, gently honeyed, subtly savoury texture that one has come so to
appreciate from this style of wine.
(Simon Field MW, BBR Buyer)

Pinot Noir predominates, a demanding grape variety with an intense character which forms the backbone of the Bollinger style. Continuity of style is ensured by an exceptional collection of over 600,000 reserve magnums, making Bollinger the only champagne House with such a wide and precise palette of aromas for their blends. As a guarantee of supreme quality, the best crus are vinified in wood thanks to a stock of 3,000 small, aged casks. The House lets its wines mature for twice as long as the appellation requirement. This is not out of vanity, but because a great wine needs the luxury of time to develop its full character. Read less
Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Fine depth and complexity in both aromas and flavors. Citrus, ginger, vanilla, whole-grain bread and nut elements combine for a harmonious presentation. Full-bodied, yet sophisticated and lively. A long, luxurious finish. Drink now through 2015. (B... Wine Spectator. A Champagne Blend wine from Champagne in France. 1997 Bollinger Grande Annee 3000ml

Extended aging on the lees allows for an incredibly complex Champagne that is vinous, toasty, pure and mineraled all at once.
