Food Pairings for Champagne Bollinger Spécial Cuvée
Bright and fresh with underlying complexity. One of my favourites.
The champagne of James Bond (the movie version) never disappoints. Full bodied, generous, with gorgeous mousse. Works with food or canapés. It's the BMW of champagne - reliable, sexy, luxurious with perfection in the detail.
Bone dry and highly acidic. This wine desperately needs to be drunk with food.
Such an amazing Champagne, clean taste. Very elegant.
Limes, lemon and ginger on the nose. Very acidic attack, with a powerful mousse of bubbles. Nice quince flavors with a clean soft biscuit note. Soft finish on gentle sugars which give it honeysuckle hint. Tasted at Tengley Oaks. 1 million magnums of this are in the cellars, some of this wine is barrel aged, which is rare for a Champagne of this level. 60% pinot noir lends acidity to this big, bold chamapagne.
Good, fresh minerality. Very nice! 94 pts. -Wine Spectator Grand Tour 2012
Champagne as good as it gets. Bond. James Bond loves it too. And so far it's the best thing I ever tasted. Looks like Gold and is rather affordable. My best friend has a 2000 vintage waiting for a special day to celebrate life and live it. Long Finish

According to the Wine Spectator: Complex aromas and flavors of rose, grilled nuts, citrus and a gently oxidative note course through this muscular, full-bodied bubbly. Despite its power, there's a gracefulness. The aftertase combines citrus and spice. Drink now through 2008.
Bollinger Special Cuvee Brut Champagne. The grapes come from different vineyards. The majority comes from the Marne valley supplemented with Premier and Grand Cru land! (60% Pinot Noir, 25% Chardonnay, 15% Pinot Meunir) This Champagne can be stored up to
Tasting Notes - The Bollinger style is always rich food friendly and impressive. This wine is all of those things with power and intensity of flavor along with ripe fruit a layer of toastiness and a dry aftertaste. This is a style of wine that can take even more bottle aging.
Light yellow. Lively aromas of lemon zest, orange, white flower and minerals. Fresh and incisive, with more citrus and chalky character than I expect from this bottling, which typically emphasizes power rather than delicacy. Finishes brisk and pur... Stephen Tanzers IWC. A Champagne Blend wine from Champagne in France. N.V. Bollinger Special Cuvee 1500ml
An overtly fruity nose speaks of high-toned aromas of raspberry strawberry and spicy cherry nuances. The effervescence is quite prominent indeed this is borderline foamy though the mousse falls away rather quickly to reveal delicious and generous flavors that are easy-to-like but not quite as complex as one might like. Still this is very pretty and I like the dry cool and clean finish. Burghound.
On average 80% of the grapes come from Premier and Grands Crus in Champagne. To ensure the consistency and continuity of the style Bollinger adds to the blend a maximum of 10% of Reserve wines which have been kept in magnum. The blend consists on average of 60% pinot noir 25% chardonnay and 15% pinot meunier harvested from 30 different villages in Champagne. Special Cuvee matures for a minimum of three years in Bollinger's cellars prior to release.
Pale gold in color with a fine mousse, the Brut Majeur is aromatic on the nose. On the palate, it is well balanced and shows great style and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Côte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, predominantly from the Marne Valley, gives the wine its appealing fruitiness and roundness.
