Champagne Bollinger Spécial Cuvée NV

Winemaker's Notes:

On average 80% of the grapes come from Premier and Grands Crus in Champagne. To ensure the consistency and continuity of the style Bollinger adds to the blend a maximum of 10% of Reserve wines which have been kept in magnum. The blend consists on average of 60% pinot noir 25% chardonnay and 15% pinot meunier harvested from 30 different villages in Champagne. Special Cuvee matures for a minimum of three years in Bollinger's cellars prior to release.

Bollinger:
The Bollinger vineyard covers 164 hectares, most of which are classified Grand or Premier cru. The Bollinger vineyard covers 164 hectares, most of which are classified Grand or Premier cru. Pinot Noir predominates, a demanding grape variety with an intense character which forms the backbone of the Bollinger style. Continuity of style is ensured by an exceptional collection of over 600,000 reserve magnums, making Bollinger the only champagne House with such a wide and precise palette of aromas for their blends.   As a guarantee of supreme quality, the best crus are vinified in wood thanks to a stock of 3,000 small, aged casks. The House lets its wines mature for twice as long as the appellation requirement. This is not out of vanity, but because a great wine needs the luxury of time to develop its full character. The champagne of James Bond (the movie version) never disappoints. Full bodied, generous, with gorgeous mousse. Works with food or canapés. It's the BMW of champagne - reliable, sexy, luxurious with perfection in the detail.

Bone dry and highly acidic. This wine desperately needs to be drunk with food.

Limes, lemon and ginger on the nose. Very acidic attack, with a powerful mousse of bubbles. Nice quince flavors with a clean soft biscuit note. Soft finish on gentle sugars which give it honeysuckle hint. Tasted at Tengley Oaks. 1 million magnums of this are in the cellars, some of this wine is barrel aged, which is rare for a Champagne of this level. 60% pinot noir lends acidity to this big, bold chamapagne.

Champagne as good as it gets. Bond. James Bond loves it too. And so far it's the best thing I ever tasted. Looks like Gold and is rather affordable. My best friend has a 2000 vintage waiting for a special day to celebrate life and live it. Long Finish

High-toned citrus meets chalky persistence in this simple, airy Champagne. The finish hints at tangerine flavors. For aperitifs.

Winemaker Notes - Now in the ownership of the Bollinger Champagne House comes Ayala Brut Majeur Champagne. Pale gold in colour with a fine mousse. This wine is rich and aromatic on the nose

($60; 60% pinot noir, 25% chardonnay and 15% pinot meunier; L017208): Light yellow. Lively aromas of lemon zest, orange, white flower and minerals. Fresh and incisive, with more citrus and chalky character than I expect from this bottling, which ... Stephen Tanzers IWC. A Champagne Blend wine from Champagne in France. N.V. This brisk and savory wine has the smooth creaminess of lemon curd lightened by lime zest and white flowers. It feels rich rather then weighty, the bubbles lifting the flavors like a mist rising off limestone. Delicious with anything saline, whether cherrystones or Kumamotos.

Always a rich non-vintage, this latest bottling doesnrsquo;t disappoint expectations. It has a rich, biscuity character, hints of toast along with pure citrus and fresh apricots. It is ripe, generous, to be drunk with food.

Jacques Joseph Bollinger was one of the first vintners to bottle dry Champagnes when he founded his firm in 1829. That style was retained as the house was passed down through the generation; today, itrsquo;s run by Ghislain Montgolfier, Bollingerrsquo;s great grandson. Pinot noir is a defining aspect of these wines, as is oak, which enriches them, dressing their substantial size in style, what Peter Liem described as ldquo;a ballplayer in a good suit.rdquo; Super rich and gently powerful, Bollingerrsquo;s current release of Special Cuvee is a grand non-vintage Brut. The aromas of jasmine and honeysuckle contrast spicy and broad flavors, full enough for roast sweetbreads.

A rich, smoky Champagne, with hints of marzipan and fennel seed accenting honeyed malt, bread dough, baked apple and gingersnap flavors. Itrsquo;s all focused by intense acidity, which meshes beautifully into layers of flavor and refined texture, with a lingering finish. Drink now through 2021.

Tasting Notes:

Pale gold in color with a fine mousse, the Brut Majeur is aromatic on the nose. On the palate, it is well balanced and shows great style and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Côte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, predominantly from the Marne Valley, gives the wine its appealing fruitiness and roundness.
