Winemaker's Notes:

On average 80% of the grapes come from Premier and Grands Crus in Champagne. To ensure the consistency and continuity of the style Bollinger adds to the blend a maximum of 10% of Reserve wines which have been kept in magnum. The blend consists on average of 60% pinot noir 25% chardonnay and 15% pinot meunier harvested from 30 different villages in Champagne. Special Cuvee matures for a minimum of three years in Bollinger's cellars prior to release.

Pinot Noir predominates, a demanding grape variety with an intense character which forms the backbone of the Bollinger style. Continuity of style is ensured by an exceptional collection of over 600,000 reserve magnums, making Bollinger the only champagne House with such a wide and precise palette of aromas for their blends.   As a guarantee of supreme quality, the best crus are vinified in wood thanks to a stock of 3,000 small, aged casks. The House lets its wines mature for twice as long as the appellation requirement. This is not out of vanity, but because a great wine needs the luxury of time to develop its full character. The champagne of James Bond (the movie version) never disappoints. Full bodied, generous, with gorgeous mousse. Works with food or canapés. It's the BMW of champagne - reliable, sexy, luxurious with perfection in the detail.

Limes, lemon and ginger on the nose. Very acidic attack, with a powerful mousse of bubbles. Nice quince flavors with a clean soft biscuit note. Soft finish on gentle sugars which give it honeysuckle hint. Tasted at Tengley Oaks. 1 million magnums of this are in the cellars, some of this wine is barrel aged, which is rare for a Champagne of this level. 60% pinot noir lends acidity to this big, bold chamapagne.

Champagne as good as it gets. Bond. James Bond loves it too. And so far it's the best thing I ever tasted. Looks like Gold and is rather affordable. My best friend has a 2000 vintage waiting for a special day to celebrate life and live it. Long Finish

The NV Brut Special Cuvée opens with elegant, well-delineated aromas of honey, brioche, roasted nuts, orange zest, flowers and peaches, of which appear on the palate in a classy, finessed expression of the house style. This is an especially refined and delicious NV Champagne. The Special Cuvée is roughly 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier (2004, 2003) sourced from a variety of vineyards. Bollinger adds 5–10% of reserve wines (in this case from 1995 and 1996, aged in magnums) which gives this offering its lovely complexity. The dosage is 7–9 grams per liter. This is Lot: 807704, disgorged towards the end of 2007. Anticipated maturity: 2008–2012.

Always a rich non-vintage, this latest bottling doesn’t disappoint expectations. It has a rich, biscuity character, hints of toast along with pure citrus and fresh apricots. It is ripe, generous, to be drunk with food.

Now owned by Bollinger, Ayalarsquo;s Champagnes have seen great improvement in recent years. This nonvintage Brut is complex, with its dry character given weight by a hind of toast, almonds and a taut aftertaste.

Bright yellow-gold. Pungent aromas of baked apple pear skin toasted nuts and brown spices. Rich and fleshy offering palate-coating orchard fruit flavors and notes of allspice herbs and toasty lees. Nicely blends sweetness and spiciness but finishes a bit abruptly with an echo of dusty minerals.

Jacques Joseph Bollinger was one of the first vintners to bottle dry Champagnes when he founded his firm in 1829. That style was retained as the house was passed down through the generation; today, it's run by Ghislain Montgolfier, Bollinger's great grandson. Pinot noir is a defining aspect of these wines, as is oak, which enriches them, dressing their substantial size in style, what Peter Liem described as "a ballplayer in a good suit." Super rich and gently powerful, Bollinger's current release of Special Cuvee is a grand non-vintage Brut. The aromas of jasmine and honeysuckle contrast spicy and broad flavors, full enough for roast sweetbreads.

This latest release of Special Cuveé holds closely to the house style. The bold, brisk and staid first taste may transport you to an oak-paneled men's club. It's all of a piece. sweet and gamey with a hard, sharp acidity, taut with exceptional effervescence. A robust aperitif.

Pale gold in color with a fine mousse, the Brut Majeur is aromatic on the nose. On the palate, it is well balanced and shows great style and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Côte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, predominantly from the Marne Valley, gives the wine its appealing fruitiness and roundness.
