Chalk Hill Estate Winery Cabernet Sauvignon 2005

Winemaker's Notes:

At Chalk Hill, Cabernet Sauvignon wine growing is a composition of diverse microclimates, distinct clones, hillside terrains and sunny exposures. This wine lends aromas of cassis, autumn leaves, graphite and mocha which prelude a palate laced with bramble berries, earth, roasted espresso beans, tar and black spices. Its youthful yet integrated tannin structure makes this wine worthy of aging for 5 to 10 years.

Chalk Hill Estate Winery has a very unique terroir and climate, and when Fred Furth, founder of the winery, flew over the land in 1972, he knew that it had the potential to be a top-class vineyard. Chalk Hill Estate Winery is located in the Chalk Hill AVA, part of Sonoma County, and it is the only estate winery located within that AVA. The land itself borders the cooler Russian River Valley and the warmer Alexander Valley, meaning that the 1,400 acre vineyard has a wide range of soil types and a microclimate that is unique to the region. Lisa Bishop Forbes, Chalk Hill’s winemaker, has managed to take the varied grapes that the region produces and turn them into extremely successful wines, especially Chardonnay, Sauvignon Blanc, and the winery’s Estate Red. Full bodied, dark fruit enveloping, rich dark chocolate notes, varying dark berries on the palate, hearty and more earth like on nose, meaty...would be great with a hearty steak

A very rich, peppery wine, with lots of fleshy/meaty scents on the nose. The finish is smooth and flavorful. This would be perfect with a nice steak.

93 Points -Wine Enthusiast (2005 Cabernet Sauvignon) Continues Chalk Hill's great track record of 90-plus Cabs, although this may be the most age worthy in recent memory. You don't want to pop the cork until at least 2011 because the tannins put it into lockdown mode. But there's a great, deep heart of black currants longing to blossom.

Rich, powerful and full-bodied, this is marked by thick Syrah-like road tar, graphite, dried currant, sage and herbal flavors that are concentrated and reflective of a cool climate for Cabernet. Drink now through 2016. 7,132 cases made. -JL The 2005 Cabernet Sauvignon exhibits classic aromas of black currants, loamy soil, and graphite. This medium to full-bodied, stylish, elegant, layered, concentrated Cabernet can be drunk now or cellared for 10-15 years. ** Only 3 in Stock **

Warm coffee and jam on the nose here, with blackcurrant on the palate and a structure that makes this wine a perfect candidate for the cellar. If you're going to drink this monster tonight, just make sure to air it out for a little while in a decanter first - then enjoy it with something meaty.
