Chablis Saint Martin. Domaine Laroche 2014

Winemaker's Notes:

"A core of lemon takes on a slight waxy quality as this evolves on the palate. Pure and bracing, this lingers with a puckering freshness. Offers fine, chalky length...90" WS 12/15 "Pale, bright yellow. Apple, spearmint, powdered stone and a hint of ginger on the rather austere nose. Then richer in the mouth than the nose suggests but still quite dry and lemony. Finishes with a citrussy whiplash of fruit; long and palate-staining for village wine. Strong acid cut is nicely buffered by the wine's thickness. Decant this wine if you'd like to drink it now...89" Stephen Tanzer, Vinous Media 08/15 "The 2014 Chablis St Martin was cropped at around 50 hectoliters per hectare with no wood contact and aged on the fine lees. It has a crisp, flinty bouquet with good vigor. The palate is fresh on the entry and has a keen line of acidity that lends it commendable tension, dipping a little toward the finish, although it should gain a little substance with 12 months bottle age..." " I often compare the work of a winemaker with that of a chef in his kitchen and restaurant. He cannot leave anything to chance, everything is important down to the smallest detail. The quality of the product, savoir-faire, the experience, the inspiration, the quality of the equipment as well as presentation and a warm reception are essential; once all these elements are put together, the meal is successful.
