Liberalia is a family owned vineyard located in the prestigious area of the Denominación de Origen Toro, in the province of Zamora, Spain. Liberalia started its production of singular and high quality wines in the year 2000. Previously and since 1996, Juan Antonio Fernández, the owner, faithful to his career as agricultural engineer, acquired and organized the vineyards, whose ages range between 30 and 100 years old. The vineyard is located in fields where the traditional crop has been the vine. The variety is Tinta de Toro, which is an adaptation to the terroir of the variety Tempranillo or Tinto Fino. The family is also the owner of native and ancestral white grapes vineyards, which include the following varieties: Moscatel de Grano Menudo, Malvasía, and Albillo. The harvest is done following traditional ways of recollection. The home-produced crop is done at dawn and the grape is placed in twenty-kilo plastic containers. Small goods vehicles take the containers at noon so that the wine-making process is done in a way that permits the berry to remain faultless and fresh. The alcoholic fermentation process takes place at a controlled temperature, which ensures that the must does not reach high temperatures. This prevents the appearance of undesired bouquets in the future wine. Wines which are intended for vintage and ageing go into large barrels made of French and American oak which are located in small groups in a ten meters underground cellar. The special features of these casks guarantee a low constant temperature during all year long, and a relative humidity of 65 and 85 %. The casks used in our vineyards are Bordelesas with 225 liters capacity or 500 liters in some occasions. A musical installation accompanies the wine during barrel-ageing. Johann Sebastian Bach and Georg Friedrich Händel provide harmony and peacefulness which are fundamental throughout this delicate process. Before being bottled, Liberalia wines pass without filtration to the clarification processes which is made with natural egg white, to eliminate and sweep away solid particles in order to obtain splendid purity and a bright and vivid shine. So viel Aufwand für einen Wein dieser Preisklasse ist eine Seltenheit. Das Besondere am Cero ist, dass die zweite (malolaktische) Vergärung im Eichenfass stattfindet und nicht wie üblich im Stahltank. Das Resultat ist beachtlich, besticht er doch durch eine üppige Vielfalt an reifen Waldbeerenfrüchten, gerösteten Nüssen und feinster Vanille. Im Gaumen harmoniert der Geschmack von roten Kirschen, Lakritze und Zimt. Ein Wow-Wein.

Eine der spannendsten Neuheiten haben wir im Toro-Gebiet entdeckt. Das Besondere am Cero ist, dass die zweite (malolaktische) Vergärung im Eichenfass stattfindet. Das Resultat ist beachtlich, besticht er doch durch eine üppige Vielfalt an reifen Waldbeerenfrüchten und ein konzentriertes Toast-Aroma vom Eichenfass. Im Gaumen harmoniert der Geschmack von süssen Pflaumen und Zimt.
