Cedarville Vineyard Cabernet Sauvignon El Dorado 2002

Winemaker's Notes:

Growing high quality Cabernet Sauvignon grapes at a mountainous 2500 feet elevation is a rewarding challenge. There is great potential to make serious Cabernet Sauvignon from the Sierra Foothills, but it requires paying meticulous attention to the vineyard, picking the grapes at physiological maturity, and managing those mountain tannins. We are already rather fanatic about these matters, and we think it shows in our 2002 Cabernet Sauvignon. Estate Vineyard Block: East, West, and Creekside Blocks on a South facing slope Blend: 100% Cabernet Sauvignon 14.4% alcohol Cases Produced: 399 Tasting Note: concentrated blackberry, black cherries, cocoa and cedar in the aromas. Layers of fruit unfold as the wine airs, and the wine's flavors are deep and rich, with soft tannins on the finish. This is a big wine, for sure, yet it is showing very well now and certainly has the structure to reward aging.

The incredible combination of quality vineyard potential, Gold Rush-era history, a thriving community of small wineries, and abundant natural beauty convinced us to settle here in Fair Play. We have been frequent visitors to the Sierra Foothills since our college days. Based upon the success of other Foothill wineries and the attractiveness of the Fair Play area, in 1993 we decided to take a closer look to find a property to develop into our vineyard. After several years of searching, we found the perfectly situated 20 acre property located 1/2 mile up a dirt road from Fair Play Road, which would become Cedarville Vineyard. The panoramic views from the top of our vineyard spread from Mount St. Helena to the west to Pyramid Peak in the Crystal Range of the Sierra Nevada to the east. Read less
Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.
