Caymus Vineyards Cabernet Sauvignon Special Selection 2009

Winemaker's Notes:

Caymus Vineyards produces two Cabernets Sauvignons - a "Napa Valley" and the venerable "Special Selection". Both Cabernet bottlings have aromas and flavors which can only be achieved through "hang time" - a technique which chances the loss of crop if early winter sets in. Leaving the fruit to "hang" on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet. Crop thinning, allowing measured sunlight to reach the vine's fruit zone, and waiting for increased ripeness are all part of our viticultural practices. Caymus Cabernets offer a wide array of aromas and flavors including cocoa, cassis and vanilla. Caymus Special Selection is the flagship wine of the Wagner family and is comprised of the very best barrels of the vintage. This wine is not produced in difficult years.

Sweet and gingery on the nose with a classic modern Napa Cabernet profile that shows plenty of candied black cherry fruit and lots of coffee-toned oak. Smells a bit spoofy. Smooth, polished and extracted in the mouth with lots of black fruit framed by notes of chocolate, licorice, and toast. Fine grained tannins nicely match the density of fruit here, and in its style it's quite good if quite hot, particularly on the finish. 88pts

Wow. This rsquo;95 Special Selection is a classic. Amazingly complex, it displays a wide range if flavors mdash; including currant, wild berry, herb, sage, coffee and tobacco mdash; gains in nuance, delicacy, elegance and finesse, and unveils pretty oak shadings on the finish. Drink now through 2000.

Better is the dense ruby/purple-colored 1999 Cabernet Sauvignon Special Selection. It reveals an overlay of sweet, toasty new oak intermixed with blackberries, currant, and vanilla with hints of tar, chocolate, and espresso. This big, sweet, juicy Cabernet is not the most complex effort. It is overt, flamboyant, and consumer-friendly. Drink it over the next 12ndash;15 years. This Cabernet hardly represents cutting edge winemaking, but it remains immensely popular with most consumers.

When first poured, this is tight and severe, its scents of rose hips, raspberry and blackberry jam not enough to fill the youthful structure and green, hot finish. But give it plenty of time in the glass and the expansive nature of the wine takes hold, filling the green tannins with black licorice, overcoming the substantial alcohol with grand and supple fruit. And therersquo;s a lasting soil character that emerges to lend it distinction, all carried along with a surprising agility for the huge scale of the wine. Itrsquo;s a bold cabernet, a Napa Valley classic.

This represents a slight stylistic change for Caymus, with the harvesting of slightly riper grapes and less time in barrel. The result is a richly flavored and beautifully crafted wine, with well-defined currant, cassis, blackberry and plum flavors that are mouthcoating, finishing with intricate coffee, mocha and pencil lead flavors. Big ripe tannins are firm but polished. Best from 2004 through 2012.

While it is fashionable to criticize this wine because of its price, and the secrecy surrounding the amount produced (who really cares?), the wine is unquestionably outstanding. The 1995 boasts a dark ruby/purple color as well as an attractive bouquet with lavish quantities of toasty new oak and black currants. There is moderate tannin, good purity, and an open-knit, sexy style. If the wine had not fallen a bit short on the mid-palate, it would have merited an even higher score. It should drink well for 10ndash;15 years.

This vintage from Caymus is harder edged than riper years of the past. Therersquo;s plenty of black cherry and berry jam flavor, but itrsquo;s wound tight, prickly, definitely firm. the tannins taste of bitter almonds, of fresh green herbs. As the fruit gathers those flavors into its own warmth, it should prove a satisfying red.

Dark, rich and intense, a vibrant, deeply concentrated and firmly tannic style. Young and tight, this wine packs in lots of rich, chocolaty plum, black currant, cherry, anise and sage and herbal flavors. Really revs up the flavors on the finish, with unfolding layers of complexity and depth. Best from 2004 through 2014.
