Big beautiful cab sav for a special occasion.
One of the most unique cabs I've ever had. Exploded with vanilla and casis and well refined. Had this for Christmas dinner this year and have two in the cellar for years to come.
Very smooth with big jammy fruit and a soft finish - obviously needs quite a bit of cellaring.

Caymus Vineyards was founded in 1972 by Charles F. (Charlie) Wagner, Lorna Belle Glos Wagner and their son Charles J. (Chuck) Wagner on the family's Rutherford property. Charles F. The Wagners took the name Caymus from the Mexican land grant known as Rancho Caymus, given to George Yount in 1836, which included what eventually became the town of Rutherford and much of the surrounding area. (Caymus was also the name of a subgroup of Mishewal-Wappo Indians whose village was north of what is now the town of Yountville.) Wagner was one of the now legendary generation which established the new wave of Napa wineries in the 1970’s (along with Warren Winiarski, Joe Phelps, Dan and Margaret Duckhorn et al). Caymus has not once but twice been awarded the Wine Spectator’s ultimate accolade of No.1 best wine in the world (with Special Selection 1984 and 1990) and twice second best. The Wagners’ 60 acres of estate vineyard remain at the core of Caymus Cabernet Sauvignon, but Chuck Wagner believes that much is gained in complexity and layering of flavors by not restricting fruit sources to a single site. As a result, Caymus has taken over farming control of selected other vineyards within the Napa Valley, some on the valley floor and some in mountain locations as high as 1,600 feet in elevation. Each vineyard block is farmed according to the specific needs of its soil type, climate, slope and orientation. The aromas of this 'Napa Valley Cabernet Sauvignon 2007' are layered with pipe tobacco, fermentation pumice, log cabin fire, moist steel, dried Poblano peppers and fine quality oak. Sweet, toasty fresh brown spice leads to the impression of richness and complexity. This wine is low in tartness yet abundant in tannins, providing impressions of friendly chock richness. The palate enters rich with sweet, ripe tannins, expanding to a greater breadth of refined textures. These harmonious qualities are so well integrated that not one takes the dominant role. This 'Cabernet Sauvignon' shows a flavor profile of dark chocolate, sweet tobacco, mocha, leather, brown spice, cedar, vanilla and sweet licorice. The primary goodness of this wine is the presence of balance, with a supple texture, approachable grip and a fruit of the earth essence.
