Sweet and gingery on the nose with a classic modern Napa Cabernet profile that shows plenty of candied black cherry fruit and lots of coffee-toned oak. Smells a bit spoofy. Smooth, polished and extracted in the mouth with lots of black fruit framed by notes of chocolate, licorice, and toast. Fine grained tannins nicely match the density of fruit here, and in its style it's quite good if quite hot, particularly on the finish. 88pts

This is always one of Californiarsquo;s better Cabernets, and the 1995 is certainly no exception. It has ripe, concentrated fruit, a long wraparound finish and great tannin-backed structure.
While it is fashionable to criticize this wine because of its price, and the secrecy surrounding the amount produced (who really cares?), the wine is unquestionably outstanding. The 1995 boasts a dark ruby/purple color as well as an attractive bouquet with lavish quantities of toasty new oak and black currants. There is moderate tannin, good purity, and an open-knit, sexy style. If the wine had not fallen a bit short on the mid-palate, it would have merited an even higher score. It should drink well for 10ndash;15 years.
Better is the dense ruby/purple-colored 1999 Cabernet Sauvignon Special Selection. It reveals an overlay of sweet, toasty new oak intermixed with blackberries, currant, and vanilla with hints of tar, chocolate, and espresso. This big, sweet, juicy Cabernet is not the most complex effort. It is overt, flamboyant, and consumer-friendly. Drink it over the next 12ndash;15 years. This Cabernet hardly represents cutting edge winemaking, but it remains immensely popular with most consumers.
When first poured, this is tight and severe, its scents of rose hips, raspberry and blackberry jam not enough to fill the youthful structure and green, hot finish. But give it plenty of time in the glass and the expansive nature of the wine takes hold, filling the green tannins with black licorice, overcoming the substantial alcohol with grand and supple fruit. And therersquo;s a lasting soil character that emerges to lend it distinction, all carried along with a surprising agility for the huge scale of the wine. Itrsquo;s a bold cabernet, a Napa Valley classic.
This vintage from Caymus is harder edged than riper years of the past. Therersquo;s plenty of black cherry and berry jam flavor, but itrsquo;s wound tight, prickly, definitely firm. the tannins taste of bitter almonds, of fresh green herbs. As the fruit gathers those flavors into its own warmth, it should prove a satisfying red.
