Caymus Cabernet Sauvignon Napa Valley Special Selection 1994

Winemaker's Notes:

Harvested from vines planted in the mid-1960s, Caymus Vineyards' Special Selection Cabernet Sauvignon originates form the same 14-acre Rutherford-appellation vineyard every year. Growing on low-yielding, gravely loam soil, the vines themselves produce fewer clusters than the average vine, producing berries more intensely flavored. 100% Cabernet Sauvignon, the Special Selection has become known for its consistency and distinct "Caymus" characteristics. Chuck Wagner, winemaker/grower at Caymus Vineyards, practices winemaking techniques that are unique to the California wine industry as a whole. Having developed his own definitive style over the past decade, Wagner attributes most of the Special Selection's success to two elements: first, the small vineyard from which the fruit is harvested and second, the vinification techniques used in making the wine. The 1994 vintage was long and consistent, the wine dark and intense. At 25 months' aging in French barrels, this wine emerged with the ripeness and structure the vineyard is known for. The Special Selection Cabernet Sauvignon is adventurous and clean in its raspberry, blackberry and cherry characteristics and is lusciously balanced with an elegant spiciness. While drinking well it its youth this wine will reveal increasing layers of complexity over time. Chuck Wagner feels this wine will be best enjoyed between five and seven years from the vintage date.

This is about as perfect a wine as you can get! Unbelievable texture ... a very nice compliment to any meaty dish. If you want to impress anybody with your wine prowess ... splurge and pick up a bottle of this.

Perhaps my favorite cab out there. Full bodied, and complete composure. Give it time to breathe - or decant - gets better the deeper into it you go.

"Cabernet is king at Caymus. During the decade of the nineties, there has been a succession of sumptuous, rich, concentrated, lavishly-wooded, cassis-flavored Caymus Cabernet Sauvignons. I have followed the Special Selection Cabernet Sauvignon
