Caymus Cabernet Sauvignon 2007

Winemaker's Notes:

Wine Tasting Notes Aromas of sweet bing cherry and ripe, lush plum. The opulent sweetness of peak-season, fully-ripe fruit brings about abundant yet soft tannins. The core of this wine is a silky and amiably rich, textured base, with a pure Napa Valley cabernet focus. Flavors of cocoa, currant and sweet tobacco. This rich and chalky wine, devoid of assertive astringencies, drinks well now and should endure for a decade or more.

Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Starts with a thick texture that is oh so silky smooth then featuring rich flavors of plums & sweet chocolate, then finishing with a taste & aroma of caramel and oak that lingers pleasantly for almost 60 seconds. I enjoyed this bottle for over an hour and it still continued to change for the better all the way to the end.

Ripe and fleshy, with rich plum, wild berry, spice and savory herb notes that are complex, full-bodied and expansive on the palate, ending with firm tannins and a dash of espresso. Drink now through 2016. 37,800 cases made. Wine Spectator. A Cabernet Sauvignon wine from California in USA. 2007 Caymus Cabernet Sauvignon 750ml

The color is very dark and extracted, almost black with a purple core full of intensity. The nose has a beautiful perfume of black and blue fruits with complexity I have not seen in this wine since the 1997 vintage! The entry is plush, with plenty ... Andy Frieden.
