Caymus Cabernet Sauvignon 2001

Winemaker's Notes:

Deep, powerful aromas of sweet, ripe black currants (cassis) dominate, followed by lighter notes of fennel/anise, lightly caramelized spices (clove, cardamom) and vanilla. In the mouth, the flavors expand and deepen, adding suggestions of dark chocolate and roasted coffee beans. The wine is solid and weighty, densely textured but still rich and supple. The tannins and spice from the oak are beautifully integrated, bringing balance and complexity to the wine's core of ripe berry fruit. The finish is long and expansive, with a lingering impression of sweet summer fruit.

There is no getting around the fact that lavish oak has a big part in the play of this expressive effort, but comfortably centered amidst all of the wine's vanillin, toast, sweet smoke and dusty earth aspects there sits plenty of mildly briary, ripe ... Healthy dark color, wonderful youthful vitality. Rich mocha, chocolate, black cherry and spice flavors, elegant and polished, with softening tannins and dusty, cedary oak adding dimension. Excellent balance.--'81/?91 California Cabernet
