Cavit Trento Brut Altemasi Graal Ris 2003

Winemaker's Notes:

This wine comes from the highest and most suitable vineyards in Trentino, particularly those located in the hills of Trento, in the highlands of Brentwood and the Valle dei Laghi. The grapes are collected in special boxes, white vinified and aged in stainless steel tanks and barrels. The second fermentation in the bottle is followed by a stay on the lees for at least 48 months. Then disgorgement is made. This sparkling wine is a golden color, with shades of green just hinted at. The bouquet is complex, with hints of honey, ripe apple and hazelnut. It is full flavored, elegant, balanced and of excellent material.

Cavit is a company deeply rooted in the region to which it belongs: Trentino. A small area in the north-east of Italy where the vine, olive tree and Mediterranean-type vegetation live side by side with spruces and larches of the Alpine flora. A land of ancient traditions and culture, where the presence of man, with his villages, castles and cultivated terraces blends in harmoniously with the majestic Alpine landscapes. The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly. Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 7,000 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling. Cavit today is one of the major companies in the wine business, operating successfully at national and international level. The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino. Read less

Summer Sparklers/ This ambitious sparkler was disgorged in 2005, its long aging on the lees yielding a creamy texture and nutty flavors. Fruit balances the leesiness with scents of baked pear and apple skin. It's rich enough for veal sauteed with mushrooms.

Our Selections of Top Sparkling Wines and Champagnes/ “A yellow gold, tasty wine made in small quantities by the metodo classico. A blend of 80% Chardonnay, 20% Pinot Nero. Aromas of rich, ripe baked pineapple with lees notes. Very fresh, crisp and rich attack with ripe tropical fruit flavors on the well-balanced palate. Finishes dry with lingering notes of honey and pineapple.”

/ With more than eight years of careful aging since the harvest, this opulent sparkler boasts a unique balance between elegance and power. The aromas are feminine and floral but the mouthfeel is intense and persistent with lingering tones of caramel and yellow rose.
