Cavit Trento Brut Altemasi Graal Ris 2003
This wine comes from the highest and most suitable vineyards in Trentino, particularly those located in the hills of Trento, in the highlands of Brentwood and the Valle dei Laghi. The grapes are collected in special boxes, white vinified and aged in stainless steel tanks and barrels. The second fermentation in the bottle is followed by a stay on the lees for at least 48 months. Then disgorgement is made. This sparkling wine is a golden color, with shades of green just hinted at. The bouquet is complex, with hints of honey, ripe apple and hazelnut. It is full flavored, elegant, balanced and of excellent material.

Altemasi Riserva Graal 2000 - International Wine Review/ We had high hopes for this wine, and we weren't disappointed. Produced by the metodo classico, Italy's version of the methode champenoise, the Graal 2000 is a rich and tasty sparkler. It offers a rich creamy palate of ripe fruit flavors, hazelnuts and nuances of toast. It reveals moderately high acidity and a rich elegance on the finish. It was also terrific with some Kumamoto oysters on the half shell some of us had for starters.
Summer Sparklers/ This ambitious sparkler was disgorged in 2005, its long aging on the lees yielding a creamy texture and nutty flavors. Fruit balances the leesiness with scents of baked pear and apple skin. It's rich enough for veal sauteed with mushrooms.
