I've finally tasted this wonderful wine that i picked up from the Cave Spring Vineyard a few weeks ago. It's an absolute pleasure to drink, a subtle nose gives way to a slightly acidic, but highly citrus taste. Though i'm not an expert by any means i feel as though there is a hint of pear in this delicately balanced Riesling. That mineral flavor that tends to come from the Niagara Escarpment is present, but not overbearing as it is in some other wines from the region. I absolutely love this wine and would highly recommend it for a light gathering. I'm not sure yet what it would pair well with but, i'd be willing to try it with a white sauce pasta and chicken. Definitely try this if you're looking for a lighter tasting white that doesn't have too long a finish. The only reason i didn't give it a full 5 out of 5 is because i want to leave room for perfection for the 2008 CSV Riesling. Thought this website says there is no availability, for those who are in Ontario, plenty of this vintage is available at almost any LCBO
