Food Pairings for Cave de Tain Cornas
Situation: Northern Côtes-du-Rhône, right bank. Grape Variety: 100 % Syrah. Type of Soil: Steep terraces on granitic sand. Climate: Microclimate with Mediterranean influence. Yield: 40 hl per ha; 37 hl/ha in 2005. Area of the Appellation: 17 ha. Vinification: Careful selection of the grapes depending on the age of the vines and specific vineyard plots. Long vatting (3 weeks), under controlled temperature. Malolactic fermentation completed in vat then ageing in French oak barrels during approx. 16 months. (30% new oak). Characteristics: Dark ruby color. Spicy nose with hints of tobacco, vanilla, red and black fruits. The palate is powerful, rich and silky, with toasty, roasted, liquorice and black olives notes. The tannic structure is pronounced. Good concentration and length. Complex finish with fruity and spicy notes. Tasting: Serve at 16-18° (60F°) with red meat in wine sauces, meat in marinade, games and cheese; even dark chocolate. To be decanted, even young.
