Winemaker's Notes:

• The grapes are hand harvested, in punched trays, then pressed in a pneumatic press. • The alcoholic fermentation is carried out in temperature controlled stainless steel vats (constant temperature of 16 to 18°C). • The malolactic fermentation is completed at 100% • The second alcoholic fermentation takes place once the wine is blended then bottled, according to Traditional Method, and maturation is carried out during 12 months in order to get an optimum fineness of bubbles. • Bottles finally undergo the process of riddling with gyropalettes, disgor gement, and are topped up with liqueur d'expedition

This is somewhat of an unknown among sparking wines. The appellation Cremant de Bourgogne was created in 1973 to encompass all sparkling wines from Burgundy in which any varietals grown in Burgundy are allowed. This sparkler is made from Chardonnay grown in the Macônnais region in the south of Burgundy making it especially light with citrus notes and a touch of minerality. Try it in place of more expensive Champagnes with appetizers cheeses and salads.
