A very leathery, grapey nose with some notes of cough syrup. Its a more restrained wine than I'm used to from Chile, there's a lot of fruit on the finish, but it's slow to start. Still very young and tight, with a green medicinal finish. Needs time

Winemaker's Notes:

Varietals: 90% Cabernet Sauvignon 10% Syrah Origin: This wine is made with the best Cabernet Sauvignon grapes from Vina San Pedro vineyards in the Cachapoal Valley. The vineyards are planted in the piedmont of the Andes Mountains on clay soils with 5°-15° slops. The vines are vertically trellised and drip irrigated. Climate: 2007 was an atypical year. Temperatures were lower than normal, and the red varieties were generally harvested at least 10 days later than in a normal year. The average alcohol levels were 1° lower than normal, and the acidity higher, which aided in color and freshness. Harvest: The grapes were hand picked during the last week of April and the first week of May. Vineyard yields were 9 tons/hectare. Vinification: Following a 4-day cold soak, alcoholic fermentation took place with selected yeasts at controlled temperatures of 26°-28° C (79°-82° F), with 6 short pumpovers per day. Total maceration was 25 days, and 100% of the final blend was aged 1 year in French oak barrels, 30% new. Tasting Notes: Color: Intense violet ruby-red. Aroma: Presents an expressive and complex nose primarily marked by red fruits such as black currant, cherries, berries, forest fruties, and spices that are well integrated with the toasted notes that come from the oak barrels. Palate: Fruity and well-integrated with good volume and soft, ripe tannins that lead to a long finish. Drink now or hold for 3 to 5 years. Analysis: Alcohol: 14.3% ph: 3.66 RA: 3.06 g/L TA: 5.26 g/L (C4H606) VA: 0.59 g/L Serving Suggestions: Ideal with red meats, game birds, venison, and ripe cheeses. Serve at 17°-18° C (63°-64° F).
