Wine Recommendation: Cass 2006 Viognier Tasting Notes: This Estate Viognier was fermented and stored in stainless steel in order to allow the natural apricot and pear flavors to come out. We hand picked at first light in order to get the grapes as cold as possible into the winery. Lood pressed the juice off the skins right way, leaving the juice at 48 degrees, perfect for minimizing bacterial growth, but not so cold as to inhibit the robust start of fermentation. Cass Vineyards and Winery is located in the rolling, oak-studded hills between Paso Robles and Creston on California's beautiful Central Coast. This area that the vineyard calls home offers quiet serenity for the visitor and a perfect growing season for wine grapes. Sited due east of the “Templeton Gap”, we receive the evening's cooling breezes that the west side of Paso Robles is noted for. We also rest far enough from the coast to generate the heat needed to optimally ripen the Rhone varieties grown in our vineyards. One hundred percent of the wines crafted at Cass Winery are Estate Grown. Our vineyard surrounds our Tasting Room and winery. You can literally touch, taste, see and smell the grapes from the block where they were harvested. The Tasting Room offers picnic fare and our chef prepares wine and food pairings daily to enhance the feel of this special environment. Scenic paths lead to oak-shaded picnic areas for our visitors’ complete wine country sensory experience. A unique feature of our wine making is that all of the Rhone grapes we grow are ENTAV certified. ENTAV (Establissement National Technique pour l’Amelioration de la Viticulture) is the national agency of France responsible for the quality of wine grape varieities. Over 90% of all French Vineyards are started with ENTAV certified plants and are only recently available in California. One of Paso Robles most energetic newer wineries, Cass Vineyard and Winery has everything going for it: a spacious tasting room, ample outdoor seating, a café that serves special dishes to complement the wines and, not least important, a very decent wine selection. The scenery is also quite fetching, and if you are equinely inclined, you may take a tour of the estate vineyards on horseback: preferably before you’ve tasted through the lineup at the tasting bar. Not to be missed is this Viognier, a fine example of a warm climate edition of this varietal. In the glass, it’s bright and light, very pretty and displays none of the telltale golden hues that bespeak a flabby overripe blob. Thankfully, it was fermented and aged entirely in stainless: Viognier needs no wood. The aromas are peachy, floral and inviting: the flavors run from nectarines and apricots to ripe pears, with pineapple and tropical notes on the finish. An ideal summertime wine for sipping out under a massive oak tree while toasting the warm, but not hot, summer sun.
